Hemp Dukkah

Ingredients

1 cup of Ananda Food hemp seeds

1 cup of white sesame seeds

½ cup of black sesame seeds

Ananda Food Hemp seed oil


Spices:

1 tsp of cumin seeds

½ tsp of coriander seeds

1 pinch of ground nutmeg

1 pinch of chilli flakes ( optional )

Ground pepper and sea salt to taste

Directions

Conventional

  1. Toast the hemp seeds and sesame seeds
  2. Pre heat oven to 160 degrees
  3. On a roasting tray put a sheet of baking paper and place hemp/sesame seeds with a drizzle of hemp seed oil ( do this separately as they will cook at different rates)
  4. Roast it in the oven until lightly coloured ( approx 8 mins) remove and allow to cool.
  5. In a mortar and pestle grind together the spices with sea salt.
  6. In a mixing bowl add the black and white sesame seeds with the toasted hemp seeds and season with the spice mix.
  7. Add more or less spices as you prefer.

Notes

Place the hemp dukkah in a small seal tight jam jar and keep until required ( will keep fragrant for 7 days).

Ideal to dress up a simple green leaf salad or sprinkle on top of hummus.

Or delicious with sourdough bread dipped in hemp seed oil then in the dukkah.
